White cabbage and onion coleslaw (with mustard)

A great one for weight loss as all the ingredients are raw.  A brilliant accompaniment for many meats, a properly made coleslaw can be very good for you.

For this you will need:

  • A white cabbage
  • A small onion
  • some cumin seeds  and pepper (cumin seeds have anti-flatulent properties and so are perfect for a recipe with cabbage and onions as the primary ingredients)
  • some french mustard
  • some olive oil.

Begin by shredding some of the white cabbage (maybe 1/5th or a quarter of it) and the whole onion and mixing together, then sprinkle over the cumin seeds and drizzle over the oil and mustard, then mix up…  (add some lemon juice to it to add an extra tang and mellow out the onions if you like)… then finish with a few grinds of pepper…

Why its good for weight loss:

These are raw vegetables, so harder for your body to digest quickly as all the fiber is intact (cooked vegetables are easier to digest as they have been broken down by the heat).  The olive oil contains fat so don’t use more than you need.   If you eat this with some lean protein such as steamed or roasted chicken/turkey you will have a meal with a low glycemic index and therefore  create a longer more gradual release of blood sugar.  This  benefits you in 2 ways:

  1. It will sustain you for longer as there is a more gradual release of blood sugars
  2. Will prevent an extreme insulin response which ultimately ends in fat gain
