Because chichpeas are a low GI food, and hearty, they are the perfect item to flesh out a dish. What’s more, they soak up flavours.
Ingredients:
1x can of chickpeas
a bundle of parsley
pinch of salt and pepper
indian spices (whatever you have to hand)
3 cloves of garlic
an onion
A tablespoon of olive oil to bind
Pour the chickpeas onto achopping board or plate and crush them with a fork, this takes a couple of minutes.
Chop up the onions/parsley/garlic finely and add the sipces/salt/pepper to the mix, then toss it all into the crushed chickpeas and pour in the olive oil.
Take the mix and form into balls, then place on some foil in the preheated oven
Chuck in a 200 degree oven for half an hour.
Serve with a good serving of fresh plain yoghurt (I also had venison burgers with mine)
