The best whole foods are often some of the cheapest!  That’s one of the beautiful truths about eating healthily.  This recipe includes super cheap red lentils and spinach leaves.  And makes for one hell of a plate.  Packed full of good nutrients and antioxidants, with a low GI and lots of dietary fibre.  It will fill you up and satisfy you.

Ingredients:

  • 2 onions
  • 3 cloves garlic
  • thumbnail sized knob of ginger
  • 1-2 heaped tablespoons of tikka masala paste.
  • 1 yellow pepper (I find these the best for sweetness)
  • 1 bag of spinach
  • about 100g of lentils
  • 100g of your favourite  lean protein (turkey, prawns, something like that)

Fry all the ingredients together (except the lentils) on medium for about 10 minutes at least.  Meanwhile simmer the lentils, they should be breaking down to nearly a paste after about 10-15 minutes.. Once the lentils have got to this consistency, pour them in with the rest of the ingredients and stir in… Easy.

It shouldn’t take long to whip this up, which is why it is perfect to eat after a hard day’s work.
